Shiitake by the pound.  As all mushrooms shiitake is full of wonderful nutrients and flavor.  Try slicing the cap thinnly, toss with a high heat oil and spread a thin layer on a cookie sheet .Bake 350 degrees till roasted crisp and Enjoy -  Shiitake Bacon.
